Do you have any fun plans for the summer?

My only plans for the summer at the moment is to survive it. Due to not being able to work outside the home because my husband is housebound, our income has been significantly reduced. We're doing what we can to build our blogs and he is trying to build a YouTube presence in hopes of generating an income. I do know there will be a LOT of praying this summer as we scramble to get our daughter ready for her move to a college three hours away.

Are you currently dieting or following a specific eating plan?

Yes, it is called the "I see it. I want it. I'm going to eat it" diet, though we are really trying to get back to the raw food lifestyle that we started back in 2010. We had great progress in the weight loss department back then as well as other health improvements. We know it works for us. We just have to be disciplined and stick to it in the face of people eating bacon around us.

How often do you wear blue jeans (or any other color of denim)?

I don't wear blue jeans and don't plan to until I get back to a decent blue jean-wearing weight. For now, I wear knit pants. The curvature of my spine due to scoliosis coupled with being overweight makes it hard to find jeans that fit properly around the waist. There's always a major gap in the back waist area regardless of how good the rest of the pants fit.

Who is your favorite singer?

I have lots of favorite singers, but my all-time favorite has been Elvis. I love Enya's music, too. Her version of Silent Night is the most peaceful, calming version that I've ever heard.


Have you cooked anything interesting lately?

No, not really. The lasagna on Mother's Day was good, but I don't think that it was interesting. :)

    do you have lasagna recipe or something you just made up yourself?

    1. My mother-in-law taught me years ago how to cook lasagna, but I've played around with the recipe over the years. I use one box of lasagna noodles (preferably the veggie noodles, but the store was out of those this time), 3 pounds of hamburger meat, a pound of mozzarella cheese, 24 ounces cottage cheese, a large bottle of Prego traditional spaghetti sauce. I cook the lasagna noodles, brown the meat, then start layering. I do a layer of noodles, a layer of cheeses, noodle layer, a layer of meat and sauce, noodle layer, and just repeat the layers until I run out of stuff making sure to leave enough meat and sauce for the top so that the noodles don't dry out in the oven. I cook it at 350 degrees for about 45 minutes.
